Matcha ice cream

Matcha Ice Cream is an ideal refreshing treat for warm days, with its rich flavor and smooth, creamy texture that brings back memories of Japan. This recipe offers a taste of authentic Japanese green tea ice cream, capturing the deep, earthy intensity of matcha in every spoonful. If you're curious to experience genuine Japanese flavors, this recipe is for you!
The recipe is very easy and do not require many ingredients.
But before we start preparing the bright green ice cream, I would like to answer three questions that I hear again and again.
Is there caffeine in matcha ice cream?
Yes, matcha ice cream contains caffeine because matcha powder itself contains caffeine. 1 g of matcha contains about 30-35 mg of caffeine. However, matcha caffeine is healthier than caffeine in coffee.
What is Matcha good for?
Matcha is good for gentle relaxation and stress reduction. It also gives you a boost of alertness and also improves concentration. Brain performance and concentration are improved by Matcha.
What does matcha ice cream taste like?
Matcha ice cream tastes delicious, like fine matcha powder. The slightly bitter taste of the powder mixes with the sugar and creates a bittersweet taste.
Depending on how much matcha powder you use to make ice cream, the taste of matcha in the ice cream will be more intense.

Ingredients

  • 400 ml Cream
  • 300 ml Sweetened condensed milk
  • 10 g Matcha powder – amount varies depending on taste
  • 70 g Sugar

Instructions

  • Take the chilled cream out of the fridge and pour it into a previously chilled mixing bowl. Sift in the matcha powder and beat the mixture until almost stiff. If you like the ice cream a little sweeter, you can add the sugar at this point.
  • Add the sweetened condensed milk and beat the mixture until stiff. The condensed milk ensures that hardly any crystals form and that the consistency is creamy, even if you don’t have an ice cream maker.
  • For a shorter freezing time, place the solid mass in a flat container and smooth it out.
  • Place in the freezer for 4-5 hours – done!
  • Tip: Dip the ice cream scoop in warm water to get nice, round ice cream balls! There are no limits to the decoration, as the typical matcha note harmonizes with many other ingredients. We recommend fresh fruit or mint, but dark chocolate and syrup also round off the delicious ice cream experience. Have fun trying it out!
