Japanese Cucumber Salad
Here is a recipe for an easy and beautiful Japanese cucumber salad that is both fresh and spicy. The "crushed" cucumbers are mixed in a dressing with sesame oil, soy, rice vinegar, garlic and chili, which gives the salad an absolutely fantastic and intense taste. The Asian cucumber salad is topped with toasted sesame seeds, coriander and fresh chilli. The salad is quick to make and can be served as a small dish or as a side dish to various Asian dishes.

Ingredients
- Cucumber 1
- Flake salt 1 tbsp
Dressing:
- Liquid honey 1 tsp
- Sesame oil 1 tsp
- Japanese soy 1 tbsp
- Rice vinegar 2 tsp
- Gochugaru or chili flakes 1 tsp
- Cooking oil 1 tbsp
- Garlic clove finely chopped 1
Toppings:
- Toasted sesame seeds 1 tbsp
- Fresh coriander 1 cup
- Fresh red chili
Instructions
- Wash the cucumber and tap it with a rolling pin so that it is easily crushed. Cut the cucumber into bite-sized pieces.
- Put the cucumber in a bowl and mix with salt. Let stand for about 10 min.
- Drain the water from the cucumbers.
- Whisk together the dressing and mix it with the cucumber.
- Top Asian cucumber salad with sesame seeds, coriander and finely sliced chilli.
