Ingredients

  • 1 teaspoon Matcha tea powder
  • 2 tsp sugar or any kind of sweetener, like stevia
  • 3 tbsp hot water
  • 250ml of cow’s milk or vegetable milk (according to your desire)

Preparation

  1. Heat the milk in a saucepan over low heat until it simmers
  2. Put matcha green tea powder and sugar in a cup
  3. Add the hot water and mix with a spoon or a whisk if possible, until you get a smooth, slightly foamy dark green batter. Please stir for a few minutes to avoid lumps
  4. Pour hot milk into the cup until it is almost full. If you want to make a cold matcha latte, use milk placed in the fridge beforehand.
  5. Use your whisk again to mix the resulting mixture until it becomes smooth and very light in color
  6. You can decorate your cup with for example coconut shavings, matcha powder, or add ice cubes for a very cold matcha latte

Ingredients for 5 people

  • 200 grams of white chocolate
  • 2 tbsp Matcha tea powder
  • 170 grams of flour
  • 2 pinches of salt
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 100 grams of brown sugar
  • 125 grams of butter ( you can use vegetable oil)
  • some pistachios or macadamia nuts ( it would make them even better)

Preparation

  1. Preheat the oven to 200 degrees
  2. In a container add the soft butter and the sugar
  3. Then add the yeast and salt
  4. In a clean container, beat the eggs and gently add them to the mixture.
  5. Insert the flour then the matcha green tea
  6. Cut the white chocolate into small pieces and add the nuggets to the dough with the pistachios or walnuts if desired
  7. On a silicone plate or a sheet of baking paper, place the cookie dough in a circular shape before baking for about 5-8 minutes depending on the desired melting or crunchy appearance.

  • 3 tbsp matcha green tea powder
  • 40 cl of liquid cream (15% fat)

Preparation

Preparation

  5. Pour the dough into molds specially designed for madeleines buttered and floured beforehand
  6. Bake your molds for 8 minutes to obtain soft and not-too-golden madeleines

Ingredients

  • 4 eggs
  • 100g of sugar
  • 400 g of mascarpone cheese
  • 200 g ladybug biscuits
  • 4g de matcha 

Preparation:

  • Add 4 teaspoons of matcha to a bowl and 90 ml of hot water. Stir until completely dissolved and slightly watery. 
  • Now, separate the whites from the yolks, add the 4 yolks in a bowl, and mix it with the 100 g of sugar. Then, add the mascarpone cheese, stirring constantly. There should be a homogeneous mixture without lumps.
  • Whip the whites and then, mix them with the yolk preparation until a homogeneous cream remains.
  • Dip the biscuits in your mixture of water with matcha that you had prepared at the beginning so that they are well soaked, and place them in a bowl or a small glass, so that they are next to each other. 
  • Once you have the first layer of biscuits, add the mascarpone on top and continue to do so until you reach the height you want
  • Store the tiramisu in the fridge for at least 4 hours. The idea is to do it the day before so the biscuits are more fluffy.
  • When you are going to plate, remember to sprinkle a layer of matcha with a sieve on top, they will look like they were just bought in a pastry shop. 

Yogurt and matcha cake

To make yogurt matcha cake

Ingredients to make the yogurt and matcha cake base

  • 120 g of hemp seeds
  • 120 g of pitted dates (let them soak ten minutes beforehand).
  • 20 g cocoa powder
  • a little bit of salt

Ingredients to make matcha filling

  • A yogurt (240g)
  • 180 raw cashews (soak them a bit before )
  • 120 g of pitted dates
  • half a cup of milk ( dairy or plant-based)
  • 1 large tablespoon of lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon of 100% organic matcha

Preparation:

  • Start with the ingredients for the crunchy part that you will use as a base. Put them in a blender or processor and blend until they have become a lumpy mass that holds together and is a bit slimy. 
  • You can start building the base of your cake in the mold with this mixture.
  • Then mix all the ingredients of the filling, except the matcha, until you get a creamy and uniform texture. 
  • Set aside half a cup of this mixture and add the matcha in one of the halves, so you will get the 2 colors.
  • Now, pour the mixture with matcha on the base that you have prepared before in the mold, then add the white mixture and with a matcha-impregnated toothpick, make shapes on top. 
  • Let it rest for 8 hours in the fridge and take it out 10 minutes before serving.
